Turkey Sausage, Apple and Kale Stuffed Sweet Potatoes Recipe

I have always been a meat and potatoes girl. And this simple stuffed sweet potato recipe is easy to make and so satisfying on it’s own. I made this dish on a night that I wanted to just unwind with a glass of wine and the perfect hearty meal.

What you’ll need:

Sweet potatoes: 2, large

Hot turkey sausage links: 3

Granny Smith apple: 1, diced

Honey: ½ tablespoon

Coconut brown sugar: 1 tablespoon

Mozzarella cheese: ½ cup, shredded

Kale: ½ cup, chopped

Salt

Coconut oil spray

 

Directions:

 

Step 1: Preheat oven to 350 degrees.

Step 2: Then, spray a cast iron pan with coconut oil spray and place your sweet potatoes in the middle of the pan. Sprinkle a pinch of salt on your potatoes and bake for an hour and 30 minutes.

Step 3: In a large skillet, add coconut oil spray and cook your turkey sausage links on medium heat for 7 minutes on each side or until crispy.

Step 4: Carefully remove the sausage links from your pan, dice them and put them back into the pan.

Step 5: Next, add your chopped kale and diced apple to you sausage. Sprinkle coconut brown sugar and pour your honey on top. Then, cook on medium heat for 10 minutes with a lid on top.

Step 6: Remove the pan from heat and set aside until your sweet potatoes are fully cooked.

Step 7: When your sweet potatoes are fully cooked (you should be able to put a fork through them), slice them in half and scoop out the inside.

Step 8: Then, add your skillet mix of sausage, apple and kale to your potatoes.

Step 9: Sprinkle mozzarella cheese on top of your potatoes.

Step 10: Bake at 350 degrees for 5 minutes or until the cheese melts and enjoy!
