How did I get my husband to eat eggplant you ask? I added “fancy” ham and cheese 🙂 This easy recipe is so much fun to make with your family and will convince even the pickiest of eaters to eat their vegetables!
What you’ll need:
eggplants: 1 medium-sized, sliced
garlic: 1 clove, minced
feta cheese: ¼ cup, crumbled
egg whites: 1 cup
polenta: 1 cup, uncooked
Italian seasoning: 2 tablespoons
sea salt: ½ teaspoon
tomato sauce: ¼ cup
parmesan cheese: 1 teaspoon
pancetta: cubed, ½ cup
Step 1: Preheat your oven to 350 degrees.
Step 2: Slice your eggplant into small circles for your mini pizzas.
Step 3: Then, add a pinch of salt and Italian seasoning to each side of the eggplant slices.
Step 4: Next, start your assembly line for adding polenta “breadcrumbs.”
Step 5: Dip your eggplant into egg whites, then dip into polenta and place on a baking sheet lined with parchment paper. Repeat for the rest of your eggplant.
Step 6: Bake at 350 degrees for 15 minutes and then remove from oven.
Step 7: Flip your baked eggplant over and add a tablespoon of pasta sauce onto each “pizza.”
Step 8: Next, add your crumbled feta cheese, pancetta and minced garlic.
Step 9: Place back into the oven to cook for another 10 minutes or until the edges are crispy.
Step 10: Remove from the oven, sprinkle parmesan cheese on top and serve!
