There’s nothing like a hearty potato soup to help weather the cold. Here’s a recipe of mine that I started making this fall. Its chock full of potatoes, turkey bacon and cheese aka one of my favorite guilty pleasures.
What you’ll need:
6 large baked potatoes, diced
1 large onion, chopped
1 quart of chicken broth
¼ cup of butter
3 tsp. of adobo
1 cup of half and half
8 slices of baked turkey bacon
2 cups of shredded cheddar cheese
1. Combine potatoes, onion, chicken broth butter and adobo in crockpot.
2. Cook on low for 8 hours or on high for 4 hours.
3. Once potatoes are fully cooked, mash them fully to make the soup thicker.
4. Stir in half and half, turkey bacon and cheese.
Add ons: top with chives, more crumbled bacon and cheese.
