Gluten Free Red Velvet Cupcakes

I am excited to share that my son Hendrix turned ONE this past week and we had a wonderful time celebrating his birthday with our family over the weekend. We decided to do a fun Mickey Mouse Clubhouse theme (Mickey ears included!) and showered him with fun gifts and great food.

This easy gluten free red velvet cupcake recipe has a hint of raspberry and topped with crushed gluten free cookies.

What you’ll need:

Hodgson Mill Gluten Free Yellow Cake Mix: 1 box

Butter: ½ cup, softened

Vanilla extract: 1 teaspoon

Almond milk: 1 cup

Eggs: 2 (or egg white equivalent)

Land O Lakes Raspberry Cocoa Mix: 2 teaspoons

Land O Lakes Chocolate Supreme Cocoa Mix: 2 teaspoons

Red food coloring: 1/2 teaspoon or until you get the color you want 🙂

Cream cheese frosting

Chocolate gluten free cookies

Directions:

Step 1: Follow Hodgson Mill Gluten Free Yellow Cake Mix directions to make your cake batter base.

Step 2: Then, squeeze in red food coloring and fold in your cocoa mix.

Step 3: Next, fill your cupcake pan cups 2/3 of the way with cake batter.

Step 4: Bake at 350 degrees for 18 minutes.

Step 5: Let cool completely.

Step 6: Then frost with cream cheese frosting.

Step 7: Garnish with crushed gluten free cookies.
