Gluten Free Apple Pie Cookies Recipe
Fall is one of my favorite seasons and I am so happy to start baking all things cinnamon, sugar and spice! This easy gluten free apple pie cookie recipe uses King Arthur Gluten Free Cookie Mix. It was my first time using one of their products and I must say that I was very impressed. It was easy to make my own creation using their mix and the consistency of the cookies were perfect. This unique take on apple pie includes all of your favorite ingredients and would pair perfectly with french vanilla ice cream.
What you’ll need:
King Arthur Gluten Free Cookie Mix: 1 box
Water: 2 tbsp
Butter: 1/2 cup, soft
Liquid Egg Whites: 3 tbsp
Cinnamon Sugar: 1/2 tbsp
Nutmeg: 1 tsp
Vanilla Extract: 1 tsp
Gala Apple: 2 cups, finely diced
Caramel Sauce: 1 tbsp
Step 1: Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
Step 2: Prepare you cookie mix in a large mixing bowl and follow box directions.
Step 3: Once you’ve thoroughly mixed your cookie batter base, add in your chopped apples, nutmeg, vanilla extract and cinnamon sugar.
Step 4: Use a tablespoon to scoop cookie dough onto parchment paper. Make sure there is a good amount of space in between because this batter does spread a little.
Step 5: Bake for 15 minutes or until crispy brown on the edges.
Step 6: Let cool completely and drizzle caramel sauce on top to enjoy! MMMM
