Gluten Free Apple Butter Filled Cupcakes Recipe

These cupcakes are amazing!! I created a very fluffy spice cake that is filled with apple butter and topped with butter cream icing. It’s incredible!

What you’ll need:

1 package of Bob’s Red Mill Vanilla Cake Mix

3 large eggs (or liquid egg whites)

½ cup of vegetable oil

½ cup of water

¼ tsp of maple extract

¼ tsp of rum extract

¼ tsp of maple extract

½ tsp of pumpkin pie spice

½ tsp of nutmeg

¼ tsp of cinnamon

¼ tsp of all spice

apple butter

buttercream frosting

Directions:

  1. Follow Bob’s Red Mill Vanilla Cake Mix instructions for mixing your cake mix, then, add all of the spices for flavor.
  2. Bake your cupcakes in the middle rack of your oven at *325 degrees for 18 mins.
  3. Then, let the cool for at least one hour.
  4. Once cooled, you’ll want to take a teaspoon and scoop out the center of the cupcake for the apple butter filling. Just make sure you don’t go all the way to the bottom or you’ll have leaky cupcakes!
  5. After you’ve scooped out the middle, fill the hole with apple butter to the top.
  6. Frost your cupcakes completely to cover the filling and sprinkle festive sprinkles and cinnamon on top.
